Mimi's Mashed Potatoes
|Wash and cut 4 large potatoes into quarters.
I like to leave the skin on, but they can be peeled. Boil in salted water
for 30 to 45 minutes. Drain and mash.
Add 3-4 tablespoons of Vegan margarine (Blue Bonnet light or Earth Balance)
whisk together over med-hi heat then slowly add one can veg. Broth or 2 cups water. Add 2 or 3 tablespoons soy sauce and a splash of soymilk, bring to a simmer. Add more soymilk or water to thin gravy. It will thicken as it cools.
