Mimi's Mashed Potatoes
Wash and cut 4 large potatoes into quarters. I like to leave the skin on, but they can be peeled. Boil in salted water for 30 to 45 minutes. Drain and mash.

Add 3-4 tablespoons of Vegan margarine (Blue Bonnet light or Earth Balance)
Or 3-4 tablespoons Veganaise
1 can veg. Broth or 2 cups soymilk
1 tablespoon lemon juice (optional, but it's good)
1 teaspoon garlic powder
1 teaspoon onion powder
2 tablespoons parsley or chives
1 teaspoon salt


In a saucepan: 3 tablespoons flour
2 tablespoons nutritional yeast flakes
½ teaspoon garlic powder
½ teaspoon onion powder
1 teaspoon poultry seasoning
4 tablespoons olive oil
½ teaspoon sesame oil (optional) found in soy sauce isle

whisk together over med-hi heat then slowly add one can veg. Broth or 2 cups water. Add 2 or 3 tablespoons soy sauce and a splash of soymilk, bring to a simmer. Add more soymilk or water to thin gravy. It will thicken as it cools.
