Sarah's Spanicopita
1 BOX FILLO (phylo) DOUGH (found in the freezer section next to pies and frozen deserts)
1 package of Extra Firm Tofu (any brand except Mori-Nu)
1 package frozen spinach
½ lb. Mushrooms
1 med. Onion
Spray veg. Oil
Italian Dressing (vegan)

Thaw fillo dough in box according to directions (approx 4 hrs at room temp)
Saute' chopped onion and sliced mushrooms in olive oil until soft.
In large bowl, crumble tofu and add:
½ teaspoon garlic powder
½ teaspoon onion powder
1 tablespoon nutritional yeast flakes
2 tablespoons lemonjuice
3 tablespoons italian dressing
1 large tablespoon Veganaise
salt and pepper
saute'd onion & mushrooms
Preheat oven to 400

Spray bottom of baking dish w/oil. Peel off one sheet of fillo and place in pan, and spray top w/ oil. Repeat w/ 7 sheets spraying each. Pour filling in and top with 8 more sheets of fillo, spraying each w/ oil. You can top with toasted sesame seeds, pine nuts, or paprika. Bake for approx. 20 in. or unil golden brown.
